Finnish Pancakes

As the Holidays approach, I think more and more about food. Not only I think what to make on the actual festive day but also in the days that follow.
One of my favorite things to do the next day is of course, eat the leftovers gathered with family and friends that are visiting. But what about people who are visiting for few days, you know, guests? That’s when breakfast becomes a big deal in my house and I am always looking for different ways to make it delicious. 
I can either poach 12 eggs and make a Hollandaise sauce with home fries or I can just make this quick Finnish-style pancake, bake it for 25 minutes and serve it all at once. These pancakes are so delicious. They are thin and the texture is like a baked custard.  
On a different note, perhaps you’ve noticed the new section on my blog called “Cluelinary 101“. Basically, I’ve gathered useful information that comes in handy when it comes to baking and cooking. Although I am not done with the list, I started with the baking part of the segment. I hope it helps!


3 eggs 
1/2 cup of flour
1 1/2 cup milk
1 tablespoon sugar
1/4 teaspoon vanilla extract
6 tbsp butter, divided in 3 parts 
1 pinch of salt
the zest of 1 lemon

Serving suggestions: powder sugar, cocoa powder, maple syrup or fresh fruits.

Pre-heat the oven to 450 F.
Beat eggs until foamy. Add in the rest of the ingredients except the butter and mix until batter is smooth. Melt 2 tablespoons of butter and add it to the batter, mix until well combined let the batter rest for 15 minutes. Place the remaining butter in 2  9 inch cast iron skillets (2 tbsp each) and place it in the oven until butter melts. Make sure the pans are well coated with butter (even the sides) Equally divide the batter into the 2 cast irons and bake for 25 minutes or until pancakes are lightly browned on top.
Serve immediately.
