Bite-size apple pies? The good news is, they are small which translate to fewer calories. The bad news is, they are so good you’ll eat the equivalent of two full- size slices of apple pie. But don’t worry, diet starts in January, right?
These are so easy to prepare. The filling which takes about 25 minutes to make, can be done the day before. The dough, dumpling wrappers. Easy enough! All you have to do is to scoop some of the filing into the dough and seal it with a little bit of water. Then they get fried for a couple of minutes until golden. Drain the excess oil and roll them in cinnamon sugar while they’re still hot. These crispy bites are best enjoyed hot with a healthy scoop of vanilla ice cream. I hope you’re enjoying the holidays. Bite-size apple pie
1 pound granny smith apples, peeled and sliced
3/4 cups granulate white sugar
The zest of 1 lemon + juice of 1/2 lemon
1/2 teaspoon ground cinnamon
1/2 cup sugar
1 teaspoon ground cinnamon
24 dumpling wrappers
To make the filling, place all the ingredients into a pot, mix well and bring it to a boil. Cook for 25 minutes or until apples are tender and most of the liquid has evaporated. Mash the apples with the back of a spoon. They don’t need to be very smooth. Set aside to cool completely. Place it in the fridge until very cold. It’s just easier to work with it. To make cinnamon-sugar, simply mix both things in bowl. Set aside.
To make the apple pies, place a little bit of the filling in the middle of the wrapper, wet the edge with a little water to help it seal better. Fold the wrapper in half to form a moon shape and press the edge very well. Make sure the wrappers are completely defrosted, otherwise it won’t seal well and the filling will come out during frying. Fry in hot oil for a minute or until golden. Drain the excess oil and roll them in cinnamon sugar while they’re still hot. Serve immediately with vanilla ice cream.
Note: These are best right out of the fryer. You can assemble and freeze them, then fry them before serving.
